Beetroot and Mint Dip

Hello!! Its almost Christmas time!! In all honesty I am away from the cold and spending my Christmas in South Africa. It has lovely being back! This may explain the refreshing dip. Though its perfect for what ever weather. Its one of my favourites because it is so fresh and light and not to mention the deep colour. It marry’s itself excellently with crudites and crisps. Just be sure not to get it on your white shirt!

Ingredients :

500g cooked beetroot, cubed

6-9 leaves mint, sliced

1 leaf mint, sliced, to decorate

1 tsp cumin

pinch of salt

pepper

Procedure:

  1. Place all the ingredients in a blender.
  2. Blend until smooth, pour into a serving dish.
  3. Sprinkle mint slices on the top and serve.
