Hello Everybody! How is your week going? I have started fresh this week full of energy, I spent the weekend relaxing and I think that’s exactly what I needed to get back on track. I thought I would share this pizza with you because it turned out a lot better than I thought it would and that’s always exciting! I was unsure as I thought the protein flavour was going to be overpowering but not at all. So here it is..
Ingredients:
50g pea protein powder
150g brown wholemeal flour
200ml water, luke warm
7g yeast (one sachet)
Pinch of salt
1 tbsp olive oil
Toppings: (Optional)
4 tbsp passata
1 tbsp tomato puree
1 bell pepper, sliced, grilled
½ onion, sliced, grilled
100g fresh spinach
7 squirts of coconut oil spray
1 slice of emmental, sliced
A drizzle of balsamic vinegar
To make:
- Place the flour and the protein in a large mixing bowl.
- Measure the water in a jug and stir in the yeast until it becomes cloudy and frothy. Add to the flour mixture. Stir.
- Add the salt and olive oil and knead the dough until it becomes stretchy, 5 minutes, preferably on a flat floured surface. Place back into the mixing bowl and cover with a tea towel for one hour to rise.
- Add the coconut oil to a pan and grill and peppers and onions until brown, 8-10 minutes. Add the spinach and cook for a further 3 minutes. Remove from heat.
- Preheat oven to 200 C.
- Roll out the dough and place with the toppings on.
- Cook the pizza for 15-17 minutes depending on how crispy you like your crust.
