Healthy Bruschetta Chicken

Good afternoon one and all! Ah what a week, finally my body is recovering and eating healthy is definitely being appreciated also Christmas is right around the corner and of course I will be eating lots of delicious food. Sooooo, I thought I would give my body a healthy kick, at least until then so I don’t feel too guilty when I eat everything. Additionally, the dish tasted great and quick and simple to make.


300g chicken breast

1 tsp oregano



90g mozzarella

150g cherry tomatoes, quartered

1 garlic clove, diced

¾- 1 red onion, diced

3 tbsp olive oil

2 tbsp balsamic vinegar/ drizzle of balsamic glaze

1 tbsp green pesto


  1. Cut the chicken breasts in half so they grill evenly, season the chicken with salt, pepper and oregano. Place one tablespoon of olive oil in the pan and gently grill the chicken, until brown, 10-13 minutes. Add the mozzarella on the top and cover until it has melted on.
  2. While the chicken is cooking place the rest of the olive oil in a large bowl. Add the garlic, onion, pesto and tomatoes. Mix together.
  3. Once the chicken is done place on a serving plate and cover with the tomato mixture. Drizzle on the balsamic vinegar and voila, delicious.
