Hey everybody! Anybody got vegetables they you should really cook before they go off? Or you just want to make a fancy but easy dish? This dish ticks all those boxes! I made this with my grandma’s leftover ingredients that were sitting in the fridge. It turned out to be the dish we all enjoyed the most! To make this I used these ingredients but I’m sure with whatever you have in the fridge or pantry it will be wonderful!
This creation needs:
1 courgette, sliced
100g of goat’s cheese, sliced
1 green pepper, halved and sliced
100g chorizo
1 can chopped tomatoes
Seasoning
To make:
- Heat the oven to 200 C.
- In a baking dish place the chopped tomatoes at the bottom.
- Alternating between the four ingredients, courgette, cheese, pepper and chorizo (or any of the ingredients you chose) place them in the baking dish.
- Sprinkle with salt, pepper and herbs.
- Bake in the oven for 30 minutes.
To serve this dish I made ravioli and topped it off with this fancy tomato sauce, scattering some parmesan cheese on the top. This is an excellent and cosy dish to have on your wonderful Sunday.
