Good afternoon food lovers, today I have this recipe which is such a treat and to make it even better its healthy! How does the week get so busy, this week was soooooo busy! Though it was a very exciting week, I am now an official bachelor graduate and I am so relieved! This dish Is lovely to kick back an indulge into something very nutritious and so simple to cook up for you or the family!
You will need:
250g lentils, cooked
½ onion, diced
1 carrot, cubed
2 eggs
150g rolled oats
150g breadcrumbs
800g sweet potatoes
300g carrots
Stalks of Rosemary
10 garlic cloves
3 tbsp olive oil
200g Arugula to serve
Step by Step guide to the dish:
- Heat the oven to 200 C.
- Cut up the sweet potatoes and carrots into long stripes and place on a baking tray. Sprinkle with 2 tbsp olive oil and rosemary and place in the oven for 40 minutes. Take the potatoes out and stir, add the garlic and put bake into the oven for a further 15-20 minutes.
- In a large bowl add the cooked lentils, onion, carrot, eggs, oats and breadcrumbs. Using your hands stir everything together until it becomes a sticky dough. Get a handful of the mixture a form a burger shape not too small.
- Heat up one tbsp. of olive oil in a large frying pan and place the burgers into the pan and cook for 5-7 minutes on each side.
Serve with arugula on the side adding a fresh taste to your plate.
