You know when you are craving pizza but you also want to eat healthy that is exactly the inspiration in making this pizza. Also I had so much butternut so I thought this recipe would be perfect. I had a look on google for ideas and of course I found a great recipe so with some tweaking and budgeting I made this pizza.
350g of mashed butternut squash (1 squash)
200g of whole-meal flour
2 tablespoons of flaxseed
A pinch of Sea salt and Pepper
2 1/2 tablespoons of pesto
A handful of spinach
50g of halved cherry tomatoes
2 chopped button mushrooms
1 stalk chopped spring onion
Making the pizza:
Turn the oven on to 200 C. Begin by preparing the butternut squash. Cut in half lengthwise and scoop out the seeds. Put in a roasting pan and fill half way with water. Place the squash in the oven for 45-60 minutes, adding more water if necessary to top up. The squash is ready when it is easily pierced through with a knife. Once your squash is cooked, scoop out the soft inside and place in a bowl, let cool.
In a separate bowl mix the flaxseed with 4tbsp of water, lets sit for 5 minutes. Add the flaxseed mixture to the squash, followed by adding the flour, salt, pepper and dried oregano. Stir until a dough like texture.
Place the dough on baking sheet and spread to form a pizza shape. Place the base in the oven for 20 minutes. In the mean time cut up the toppings.
Once the base has been cooked, place on a serving dish and add the toppings as you please.
If you would like to make this a classic pizza and add cheese to the top, I would suggest to place the pizza for a further 10 minutes in the oven so the cheese gets extra melty and delicious.
Finally cut up and enjoy! x
